Malted Grains

Park Avenue Mercantile stocks more than twelve base malts at all times, including Golden Promise, Maris Otter, Asburne Mild, Munich Malt and many more, as well as a free grinding service for your grain. Some of the malts we carry are detailed below. If you need it, we probably have it.

 Ashburne® Mild Malt

Registration #2,230,137

Ashburne® Mild Malt and Bonlander® Munich Malt were concurrently developed in the late 1990s to satisfy American craft brewers who couldn't get enoughspecialty maltsfor brewing. Both are 2-Row, highly kilned malts and are excellent in flavorful, traditional beer styles. They bothalso contribute flavors unique to these styles of malt.

Ashburne® Mild Malt was developed specifically for a brewer who requested a malt with a specific flavor and color profile. Its name came from the name of the street on which the brewery was located.

 

 

Carapils® Malt & Cara-Pils® Malt

Registration #502,782 & #2,758,101

Both wordmarks refer to the same unique, dextrine-style malt produced exclusively by Briess Malt & Ingredients Co. in the United States. The main function of Carapils® Malt is increase foam production, improve head retention, and enhance mouthfeel. And while other dextrine-style malts are available, none perform as well as Carapils® Malt produced by Briess. Carapils® Malt owes itssuperior performanceto a proprietary process not duplicated anywhere within the malting industry.

 

Caracrystal® Wheat Malt

Registration #1,145,896

This malt carries the characteristic "cara" prefix for its caramel malt qualities.

 

Maris Otter

Finest malts from the British Isles. Maris Otter is an English 2-row varietal barley introduced in 1966 that was developed specifically to produce high quality malt for the production of ale. Its low nitrogen content, uniformly plump kernels, and robust husk has made it a favorite among English brewers for its reliable and forgiving brewhouse performance, and, most notably, because of the unique Maris Otter flavor it adds to the beer which may be absent in modern barley varieties grown for yield and ease of agricultural production. This fine base malt will easily convert with a single infusion mash, and produce an orange tinged golden wort with a unique rich, slightly nutty flavor. An excellent malt for any English style beer. 3.5-4.5°L

 

Briess Goldpils® Vienna Malt

Briess Goldpils® Vienna Malt is a superb example of this classic malt. Less sweet than Pale Ale Malt, it is a rich malty 2-Row base malt that offers complexity and depth with a toasted note at the finish for your classic Vienna, Oktoberfest and Marzen beers. It finishes exceptionally clean and, at 3.5º Lovibond, contributes light golden hues. Use in any beer style that benefits from rich malty character. Sufficient enzyme level to support the inclusion of even the most demanding specialty malts without extending the brewing cycle.

 

Golden Promise

1.7-2.0° L. Malt from a traditional barley variety grown in Scotland. Golden Promise produces a mellow wort, with a sweet, clean flavor. This base malt is a must for authentic Scottish ales, great for English styles as well.

 

Caracrystal 10 – 120L Malts

Briess Caramel Malts are produced indrum roastersthat have been custom designed and engineered specifically for roastign roasting malt and barley. This custom engineering allows for the application of significantly higher temperatures to green malt, which is a must for thecaramelizationof sugars, uniform temperature application to all kernels, and precise control of airflow and moisture. Full, caramel flavors and aromas are not achievable with kilning. Drum roasters also produce moreuniformandconsistentresults within each batch and from lot to lot
